• Harvesting three leaves off the kitchen laurel 🍃  is how grandmother Lina starts her day. Laurel has exceptional medical properties and is one of the six staple herbs used in #venice in the past. 
Laurel grows extremely well in its protected corner on the terrace and after six years is as tall as I 😀 It goes into almost anything we eat, and we akso use it to make burro all'alloro, laurel butter: Fry a laurel leaf in a pan with two tablespoons olive oil for a couple of minutes. Take the leaf out, add two tablespoons butter and any herbs and blossoms you like. In spring, we add salvia blossoms, but borrage and lavender blossoms work equally well. This makes a healthy spread for your #breakfast brioche 🌞

Vegan soulfood pasta dish 🍝 flavored with freshly picked herbs from the garden, making up for this cold May in Venice 🌱🍃🌿. The pasta sauce consists of garden peas, borrage, parsley, dried tomatoes, thinly sliced lemon balm and sorrel leaves. We also added the tiniest amount of cinnamon which adds a warm flavor while fully bringing out the zesty taste of the garden greens. Sprinkle with #taleggio cheese and a few drops of chili-flavored olive oil, lots of ground black pepper and sea salt.

  • Flowers syrups were used in Medieval recipes to sweeten cakes in Venice. We make flower syrup at home, like this one made from lilac, but also love rose, elderflower, acacia or dandelion syrup. The secret is to use a hint of spices that enhance the flavor of the blossoms and at the same time, keep the syrups fresh for a longer time. Lilac syrup could also be used to flavor a ricotta - lemon filling for sponge cakes. You'll find the recipe in my upcoming book.
